Organic Parmigiano Reggiano from the Bianca Modenese cow. 40 months.
Caseificio Santa Rita is a cooperative dairy founded in 1964 in Serramazzoni, in the Modena Apennines. It makes organic Parmigiano Reggiano from the milk of the Bianca Modenese, a white local cow breed brought back from near-extinction and protected as a Slow Food Presidium. Fewer cows, less milk, a richer and more aromatic cheese.
Forty months of ageing take the cheese into rare territory: amber colour, intense crystals, notes of spice, dried fruit and broth, and a very long finish. Vacuum-packed 7.1 oz (200 g) portions, sold by the piece.
